It was created by the British Surrealist artist Eileen Agar (1899-1991) in 1936. Bouillabaisse is a kind of fish stew so the hat is decorated with coral, sea-shells, fishbones and a sea-urchin. The artist's playful arrangement of these things reflects the Surrealists' interest in the creative fantasies of children.
